This is one of the most delicious recipes I’ve found for pork chops — got it from a friend years ago who was an expert on cooking with limited resources (she lived in Labrador). The proportions you use will depend on how many chops you’re cooking… Dust the pork chops in flour. Add some oil or a nob of butter to a heated frying pan (medium heat) and brown the chops, sprinkling salt and pepper on each side. Remove from the burner and tranfer the chops to a baking dish. If you’re cooking a large number, you can overlap them a bit. Cut onions and green peppers into long strips and place on the meat (again, the amount depends on the amount of meat — for two chops I would use half of a medium onion and a quarter of a bell pepper). You can also add herbs at this time — cook’s choice. 🙂 Pour canned tomatoes, including the juice, over the lot. Again, if it’s only two chops you might not want to use the entire can of tomatoes. You can use whole or diced tomatoes — if whole, chop them up a bit. Check for saltiness — if no salt has already been added to the tomatoes, you may want to sprinkle some more on the meat at this time. Cover with foil or a lid and place in an oven preheated to 350 F. Bake for a good hour or until meat is tender and comes away easily from the bones. Remove the lid for the last 15 minutes of cooking. Serve with rice or potatoes and the vegetable of your choice. No it doesn’t. Law requires that all ingredients be listed on the Packaging, for this very reason. Some people don’t want thing like your coworker (pork), others have food allergies like my neice (soybeans).
