I am a native English speaker and I have never heard anyone say”Sorry for the miss.” Are you sure you have heard it many times, or even so many times? If you were planning to see someone and you were not able to, you would say “Sorry I missed you.” “Sorry for the oversight” is correct if you have made an oversight. In other cases you would say “Sorry for the error” “Sorry for the mistake” or whatever was appropriate.

Sorry for the miss

It is casual, slang for “Sorry for the mistake”

Oversight is not a very commonly used word. It wouldn’t seem natural if someone used it in a sentence, although it is technically correct.
