Substituting 3/4 cup fresh parsley for dried?
Is it possible to substitute 3/4 cup of fresh parsley for dried parsley in a recipe? If so, what would be the appropriate conversion ratio, and how might this substitution affect the flavor and texture of the dish?

How much dried are you substituting for? 1/4 cup? That would be about right.

Use one teaspoon of a dried herb as the substitute for one tablespoon of a fresh herb. So, for the 3/4 cup (twelve tablespoons) of fresh parsley, you would substitute with twelve teaspoons of dried parsley.
Dried herbs tend to have a strong, concentrated flavor, so substituting a dried herb for a fresh herb works best for the hearty varieties like oregano, thyme, and sage. You can add these hearty herbs at the beginning of the recipe as they will mellow while the food is cooking. For herbs like basil, mint, and parsley, which have a delicate flavor, use the fresh herbs over the dried herbs. You can add these delicate herbs to the cooked dish just before serving.
For future reference, if a recipe calls for a dried whole leaf herb, you can substitute with the ground version of the herb, using half of the required amount.
