Chicken and rice Casserole1 pound boneless chicken breasts (or pork chops)1 can beef or chicken gravy1 can beef or chick stock/broth1 large onion sliced1 bell pepper sliced (optional)1 tomato sliced (optional)1 can sliced mushrooms2 cups water1 cup uncooked rice1 large baking dish sprayed with PamSalt & pepperPreheat oven to 375Season meat and lightly brown in a panTake prepared pan and spread out the uncooked riceWhen meat is brown place on top of ricePour over gravy and brothAdd onions, bell pepper and tomato slices over each piece of meatand then pour over the waterCover with foil and bake for 35 minutes. I eat junk every night so probably a burger and chips or a kebab. I never eat healthy. Fortunately I have a lucky metabolism so I am actually underweight but I know I am not doing my arteries any favours but I am actually addicited to junk food. I think it is addictive.
