What does it mean to leave a “forwarding address” after you quit a job? Aren't employers supposed to have your personal address if you work in a professional setting? What purpose does a “forwarding address” serve in this context?

Most likely they want you to provide an address so that they can mail your W-2 to you (If your an American) when that time comes. Also, some people use P.O. boxes in addition to their physical address.
