Pastry is made from flour a little water and butter/shortening /oil and sometimes sugar. It is primarily used to encase, or form a base for, sweet or savoury foods. For example; apple pie/beef and Guinness pie. Sometimes pastry can stand alone like croissants.
A cake is a stand alone dessert which along with butter/shortening/oil and flour, also contains a mild raising agent, eggs and some form of liquid, usually milk. Cakes are usually turned out to cool before before being iced, frosted or decorated. They are almost always sweet foods. Generally cakes have a spongy and slightly moist feel and should bounce back when pressed firmly but not hard. For example, Carrot Cake and Black Forrest Gateaux. Cakes like Mud Cake are generally more dense and so are less spongy.
Cakes are not to be confused with puddings. Puddings are usually created in the dish they are baked or boiled in and are usually very moist. Because of this they are generally not iced or frosted. For example, self saucing chocolate pudding/ bread and butter pudding.
It’s debatable whether trifle is a pudding or a cake. Hope this helps.
