who much brisket to feed 100 people?
I am hosting a wedding and would like to know how much BBQ brisket I need to order to feed 100 people. Any recommendations on portion sizes or tips for ensuring everyone has enough would be greatly appreciated!

If your buying whole briskets to do, then figure they shrink about 25-30% in cooking, so a 12-15 lb brisket raw will yield 8-10 pound of cooked meat, for a wedding either sit down or buffet think 6-10 oz of meat for safety sake, so at that portion setting you need at least 240-300 oz of cooked brisket, so I would get 10-15 raw whole briskets, season lightly, cook them slowly for 12-18 hours at 250-300 d F, trim the fat if you wish after they are cooked, fat means flavour and keeps them moist.
If your adding sauce to them add it in the later stages of cooking, and when looking at side dishes, figure for potato’s, 1 if baked, 6 oz if mashed, veg are flexible, breads 1-2 pieces per person and dessert is your choice.
