Yes, rose petals are edible. Don’t worry about nutrients, though. Its like celery, it has hardly any calories. In Mexico, there is a dish where they glaze rose petals.

Yes. I’ve seen recipes for rose petal jam. I also drank rose petal tea.

Rose petals are edible, but do not use commercially grown flowers (from a florist, etc.) in food preparation as they are usually grown w/ pesticides or other chemicals. You would either need to grow them yourself or find organically grown varieties.
