Blanching for fries is different than blanching other veggies. Please do not listen to the people who told you to blanch your fries in hot water.You put them in the hot oil for abut 45 second to a mintes. let them drain and cool then drop them again to get crunchy and golden brown. Let me share a few other tips on making fries with you:Fries:Okay this will seem like a lot of steps but it really is worth it and not that much work just a lot of steps.Slice the potatoes, you can leave the skin on if you wish. Rinse a time or 2 in cold water and then soak in cold water. At least one hour. Drian and dry well. I even go as far as laying them on a clean dish rag/towel. Make sure there is not anywater dripping off of them. This will make your oil bubble and boil over as well as break it down sooner so you can;t use it again.Heat the oil to 350. If you have a fryer this is easier but not neccesary.I heat my oil on hi then reduce heat to med-hi when I start adding fries.Fry once for just 2-3 minutes. Remove from oil and drain-I know they aren’t fully cooked or browned yet. Once they cool a bit, drop them back in the oil until nice and golden brown. Drain again.Season as desired. DO NOT season your fries before adding them to the oil-adding salt to the soaking water is okay if you choose to do so. If you season them before frying you will just burn the seasoning and ruin your fries and oil. ************ And if you are in the mood for a change of pace try these. Sweet Potato FriesYou can buy frozen sweet potatoes and those are very nice to have on hand but if you really want to make your own here is how to do it.Sweet potatoes are hard to peel, and even more work to cut. So first you need to prep the potatoes.Put the sweet potatoes in the micrwave for about 3-5 min. You dont want the potatoes cooked all the way but a little softer-but still crisp and this will also help the skin to release a lot easier.As soon as you can touch the potatoes peel the skin off using a paring knife.Then when they are a bit cooler start to slice into thin fry size strips.Heat some oil in a deep fyer or large thick bottomed and walled pot to 350 degrees.Drop the potatoes into the hot oil and fry until crisp and there is just a touch of color ont the potatoes remove from the oil and drian on papertowels or brown paper bags.Season how ever you like, cinnamon sugar, brown sugar etc… But I like just plain old salt and ketchup.****Keep an eye on the fries. Sweet potatoes go from perfect to bitter and burnt in less than the blink of an eye....
