Who looks after orphans in an orphanage?
In an orphanage, what is the title used for the individuals responsible for looking after and caring for the orphans?

While /most/ orphanages have been closed in Europe and North America, they do still exist. Even in the “western world”, but they are usually called “residential homes” “youth centers” or “group homes”. It’s where they place children for whom they cannot find typical foster care.
Most genuine orphanages are run by religious organizations, and the people who look after the children are most often devotees to their religious order. Thus, in an orphanage staffed by nuns, the caregivers would be called “Sister” and the head of the facility would be “Reverend Mother”. Obviously this varies by the affiliation which runs/staffs the orphanage.
In residential/group homes – the modern equivalent of an orphanage, staff are often addressed: in the same manner as teachers “Ms Jane” for younger children; or simply “John” for older children. The official title is usually something like “Resident Aide”. It all really still depends, however, on where the funding for the facility comes from – those with private (usually from religious organizations) funding, typically have more relaxed standards, and in a few, the children even call the staff “Auntie” or “Uncle” whatever.
There are also typically (in modern times) doctors or nurses and social workers who make frequent, scheduled visits to these facilities, even if they don’t work there full time. Those persons are typically addressed by their proper titles.

Yes, while rare, they still do exist. There is one in my area and it is still called “St. — Orphanage”. I know that it is mainly staffed via our social services department, so I know there are Case Workers and Social Workers there but there may also still be “clergy” who work there. The exact title of the caregivers?? Not sure. Why?
