Can I freeze water chestnuts?
Can I freeze water chestnuts? I opened a 10 oz. can and only need 5 oz. for the recipe. Is it possible to freeze the remaining water chestnuts, and if so, what is the best way to do it?

Yes, you can freeze water chestnuts, but only for about 2-3 months. It is also better to freeze them in water.

I am a former chef and have made them and the ones with chix livers for freezing, my suggestion is rinse the WChnuts, and blanch the bacon, bring a small pot of water to the boil, cut the strips of bacon in half, drop them in for 30-60 seconds, drain them and cool them under cold water, wrap the chestnuts ( Iuse plain round toothpicks not the coloured ones) and place them on a cookie sheet or flat pan and freeze them, when solid, put them in a doubled Ziplok bag until you need them by freezing them and then bagging them you can take out a few and leave the rest for later, even inexpensive plastic containers from Dollar Giant or discount stores work, you can do this for sausage rolls in puff pastry, profiteroles, cheese puffs and mini quiches or pizzas.

You can freeze just about anything. The trick is for it not to taste like crap once you defrost.
