I was also going to refer you to the Wilton chart. This says you need 10 cups of batter; most cake mixes yield 4-6 cups of batter. (Some flavors mix up with more volume than others, and depending on how long and how well you mix it, and with what---stand mixer vs. handheld---you can end up with more or less batter.) Based on this, I'd suggest you buy 3 cake mixes; prepare 2 and see how much it fills the pan. You want it to be at least 1/2 full, but fill it up to 2/3 full if you want a taller cake. If the pan is not full enough to your liking with 2 mixes, mix up the third cake mix and use a little of it, then use the rest of the batter to make cupcakes. You can always freeze them (unfrosted) and use them at a later date. After they've cooled, freeze them in a tray; when they're frozen, throw them in a freezer bag and put them back in the freezer for up to several months.Happy Baking! ~ Maria

I just made a cake today and I used 2 cake mixes which contained 15.25 ounces for my 12 x 18 x 2 pan. I baked this cake at 325 degrees for 30 minutes and it came out perfect. I made a second cake the same way, so I could make a second layer. I had to make a double batch of butter cream icing, for the filling and the frosting. I was able to serve 45 people, each piece was 3" long x 2" thick x 5" deep (because of the two layers). LAW July, 2016

I have that same pan. I used to use 2 1/2 cake mixes for it, but the amount of cake mix in those boxes has shrunk! They used to contain 18.25 oz, now it's 15.25 oz, depending on brand. Use 3. Don't fill the pan more than 2/3 full, and bake it at 325 F (this helps it to not dome up in the center as much). You can also look at Wilton's chart (I LOVE it! -print it out & keep it!) though they're giving amounts to TOTALLY fill the pans- in other words, you'll have to trim some off the top when they're done baking.The chart also gives the amounts of frosting to need to cover the cake: http://www.wilton.com/cakes/making-cakes/baking-pa...

One cake mix is for a 12x15 pan but it does not take the cake all the way to the top. I would use two boxes of cake mix, fill the pan half full and use any extra for a little cake or cupcakes...

Just one normal cake mix. The box probably already has directions for a 9 x 13 pan. Just be careful that your 8 x 12 doesn't overflow!
